Mr Flax uses only the finest quality highly prized New Zealand King Salmon. This rare luxury salmon makes up less than one percent of the world's salmon population. It has the highest natural omega 3 oil content of all salmon varieties, affording it a luscious, elegant texture and rich taste.
Each fillet is trimmed and pin-boned by hand and artisanal cured for many hours in small batches. The salmon is gently caressed with smoke from the embers of a customised blend of sustainable sourced Australian native woods, resulting in a delicate nuanced flavour, aroma and texture.
